Do you know the history of the Food Truck?

The history of food trucks: from the street to street food icons

Food trucks are not a passing fad. They are vehicles steeped in history, flavors… and dreams.

Over the decades, they have evolved from practical tools to feed workers to become symbols of freedom, entrepreneurship, and culinary creativity.

From cowboys to foodies: it all started in the United States

The origin of food trucks dates back to the 19th century in the American West.

At the time, they were called “chuck wagons”, these wooden wagons equipped to feed cowboys on the move.

It was the first mobile version of street food: simple, efficient and completely nomadic.

With urbanization, these wagons are giving way to more modern trucks.

In the 1930s-1950s, in the United States, the first food trucks appeared, feeding workers, soldiers, and laborers.

This was also the era when the famous polished aluminum mobile diners took to the road, a style that would later inspire generations of food trucks.

The street food revolution

In the 2000s, food trucks experienced a real revival.

These are no longer just trucks for “quick snacks” but high-end mobile kitchens, where chefs, artisans and enthusiasts offer creative, homemade dishes, often inspired by their cultural roots.

In Los Angeles, New York, or Austin, food trucks are becoming a cultural phenomenon.

You can eat fusion tacos, gourmet burgers, and revisited Asian dishes, always in a friendly and relaxed atmosphere.

Very quickly, the enthusiasm crossed borders.

The global phenomenon

Today, food trucks are everywhere: at festivals, city centers, markets, private events, and even in rural areas.

In France as elsewhere, it embodies a new way of doing business, more agile, more free, closer to customers.

It is in this spirit that Trokita – La Fábrica was born.

Inspired by this long history, our mission is to offer modern professional caravans, ready to be fitted out according to each project, with the iconic style of American food trucks… but with solid, approved and reliable European manufacturing.

Why is this story important to you?

Knowing the history of food trucks helps to understand why they are so popular.

It's a story of independence, culinary passion, and human connection.

Choosing a food truck is choosing a lifestyle, and at Trokita, we design each unit as a starting point for this adventure.
